Last night was the night of the quiche of ultimate doom. It turned out very un-quiche-like, but oooooh so good! I'm going to have to give it a name cuz I know I will make it again.
Here it is:
Bacon and Eggy Casserole of Ultimate DOOM!
1/2 package of bacon
1 med onion
1 green pepper
6 eggs
1/2 cup water or milk or soy milk or rice milk or goat's milk....
4 slices whole wheat bread
mozzarella cheese (or in our case - soy cheese)
sliced olives
salt and pepper to taste
Preheat oven to 350 F
Try it out with any substitutes you like. Caramelizing the onions beforehand made them sweet and tasty. Go me!

Preheat oven to 350 F
- Line the bottom of a 9" square baking pan with the bread.
- Cover bread with slices of cheese.
- Sprinkle olives liberally over cheese and bread.
- Sautee bacon until 3/4 cooked.
- Add diced onion to bacon and continue to cook.
- Add diced green pepper to onion and bacon. - cook until bacon is fully cooked but NOT crisp.
- Briskly whisk together eggs and water. Add salt and pepper.
- Spread bacon mixture over the bread in pan.
- Pour egg mixture over (don't worry, it won't cover everything and that's okay!)
- Bake in oven for 45 - 50 min or until no longer runny in the centre. The eggs will puff while cooking and fill the pan.
Try it out with any substitutes you like. Caramelizing the onions beforehand made them sweet and tasty. Go me!
